Sometimes I’ll get a frantic text from friends or family when they’re baking.
Help! I’m making banana cake and I have no buttermilk!
Gah!!! I’ve started making pancakes and I have no buttermilk!
So I thought, just incase others are new to baking and may not know, I’ll post a quick tutorial for a buttermilk substitution to help you out! And my gosh this takes all of 5 minutes and you probably have the ingredients on hand.
Start by putting a full tablespoon of lemon juice in the bottom of a glass measuring cup. I wonder if your measuring cup is as old and well used as mine? Then, top the lemon juice with half and half cream until you reach one full cup. You can use milk too, but I think half and half cream is best.
Now let this sit for 5 minutes (you see it’s beginning to curdle and that’s ok). Aaaaand done! Quick and easy. Add it to muffin mixes, pancakes, cake batters and any other recipe that requires buttermilk.
