It seems that last time I posted we were in a heat wave. And guess what? This time, as I am writing this, we are smack dab in the middle of a heat wave. It is smoking hot outside friends. But I welcome it! I say, “Bring it Mother Nature!” I think about those days that I’m shoveling in a -20° snow storm and praying for summer to come.
Summer for me, feels like a never-ending barbecue. It’s one long giant camping trip. Actually, as I’m posting, we are currently on a week-long camping trip at the lake. The sun has almost set and I’m sitting at our picnic table listening to the tree frogs and cicadas sing their night song. The fireflies are just starting to glow in the woods. I’m burnt, smelly, and being eaten alive, but I love every minute of it. We enjoy late nights by the fire, long days in the water, and grilling amazing food.
I’m pretty lucky to have most of the summer at home. And I don’t take it for granted for one second. I soak up every bit of the summer sunshine that I can!
We are so lucky to have such an abundance of locally grown food at our fingertips, during the summer too. We eat so well in the summer because there is so much available and everything tastes so incredibly fresh. I spend a lot of time preserving and storing all of the produce that is available so we can remember these good food feelings in the dead of winter. I’m surrounded by farms, orchards and markets, that I visit sometimes daily for fresh goodies.
This is one of the drinks that we’ve really been enjoying since local sweet cherries came out. I’ve pretty much given up on getting the cherry stains off my fingers until the season is over (sorry about that in the pictures). This is a classic Mojito with sweet cherries muddled in. I’ve been using sparkling water instead of soda water, to add a little extra sweetness. We’ve stopped at roadside stands to grab fresh cherries to make these drinks while camping. It’s so good! If you want a non-alcoholic version, that’s just as refreshing, simply leave out the rum.

Sweet Cherry Mojito
- 4 fresh mint leaves
- 1 tsp sugar
- 3-4 sweet cherries, pitted
- 1 lime wedge
- ice, approx. 1 cup
- 1 1/2 oz. white rum
- flavoured sparkling water (cherry or lime is delish)
1. In a tall glass, muddle together the cherries, mint, sugar and lime wedge. Fill the glass almost to the top with ice and add the shot of rum. Top with sparkling water, stir and garnish with a sweet cherry. Serve immediately.
